This particular position enriches the Syracuse gastronomy with dishes based on fish and, to the same extent, with vegetables and products of the land.
Among the first courses we suggest you to taste: the "Pasta con le noci" (pasta with walnuts, based on pasta served with a meat sauce and walnuts) and the "Pasta fritta alla siracusana" (spaghetti served with a sauce prepared with olive oil, garlic, anchovies and breadcrumbs).
Another savoury dish is the "Tonno alla ghiotta", based on fresh tunny-fish cooked with potatoes, tomatoes, peppers and onions and the "Coniglio alla stemperata", a dish prepared with rabbit meat, white olives, celery, tomatoes and capers.
Concerning the sweets, the ones based on marzipan are very appreciated, among which the "Occhi di Santa Lucia" ("St Lucy’s eyes") are very famous, since they are typical biscuits dedicated to the saint, the "Buccellati" (with candied orange, dried figs, raisin), the "Cassata Siciliana" ( sponge cake, almond paste, ricotta and candied fruit) and the "Cubbaita" (a kind of torrone prepared with sesame seeds).
