In Sanremo the current way of eating is the Mediterranean diet, made of healthy and light food, based on olive oil, pasta, pulses, meat, fish, fruits and vegetables.
Liguria produces one of the best olive oils of Italy, with a delicate perfume and a low acidity that make it particularly digestible.
The typical recipes are: the home made pasta, as the trofie (a short kind of fresh pasta) and the ravioli, served with pesto (a delicious sauce made with basil, pine-seeds, cheese and olive oil), the different kinds of salad and the stuffed vegetables.
Among the main courses you can taste the torta verde (a pie stuffed with rice and vegetables), the coniglio al vermentino (rabbit meat prepared with Vermentino wine) and the excellent kinds of focaccia, among which the most typical is the sardenaira, based on tomatoes, sardines, special olives from Arma di Taggia (taggiasche) and oil.
