The typical dishes of the cooking from Udine and its province are the starters based on rice: ris e lujanis (rice and beans) and rice with asparagus, that is a typical vegetable of this area.
Other typical and tasty dishes are: the cialons (ravioli with a filling made with cheese, eggs and meat), the bisna (a dish based on polenta with sauerkraut) and the brovada (white turnips fermented in wine) served with cotechino (pork sausage) or with pork meat roasted on the spit.
Another typical dish is the salame alla friulana, that is sliced, tossed in a frying pan and then served with polenta and the row San Daniele ham.
The wines from Friuli are very famous and we remind you, among the red ones, the Merlot and the Cabernet, but there are also some white wines that are as much rare: the Pinot Grigio, the Chardonnay, the aromatic Traminer, the Tocai Friulano and the Collio Goriziano. Then the Piccolit, the Refosco di Aquileia, the Ribolla Gialla and the Riesling Renano are other special and excellent wines, as well.
