The production of pasta is spread in the whole region and, in particular, that of the maccheroni alla chitarra (a kind of short pasta), which are one of the gastronomic symbols of Abruzzo and are served with a lamb meat sauce or with a tomato and basil sauce.

 

We want to remind you that the very first hotel-management school in history was born in Abruzzo, thanks to Ferrante Caracciolo, who founded it in 1560, in its Villa Santa Maria castle.

 

Otherwise, the typical gastronomy of the coast is rich in recipes based on fish, with a wide range of fish soups (called brodetti). They vary in the different areas of the region, according to the kind of fish that is used for cooking.
